One of my proudest accomplishments!! This delicious empanada recipe was born out of an effort to transfer the flavors of traditional Argentine empanadas into a completely vegan empanada. Organic lentils are the star of the show here, tied together with shredded carrots and diced potatoes, while seasoned exactly as the most traditional Argentine empanada (hence the name!) with cumin and paprika; a hearty and delicious creation!!
