Curried Sweet Potato and Butternut Squash
Would the vegan line truly be a vegan line without butternut squash!? To switch up this flavor profile from the butternut squash recipe from the original line, I added a few additional ingredients and seasonings. The sweetness in this recipe is derived completely from the roasted sweet potatoes. Additionally, I wanted to include a protein source, therefore decided on toasted quinoa. Once the quinoa is cooked and seasoned with curry, it is toasted in the oven to strengthen its structural integrity so it doesn’t get texturally lost in the mix with the squash and sweet potato. It all comes together as a fine vegan empanada option for someone that enjoys the sweeter things in life.
