Curried Veggie Chickpea
A very unique empanada in our repertoire. This hearty empanada has an Indian inspired flavor profile, seasoned with spices like Garam Masala and Turmeric, among several others. The platform of this empanada is a compote that I love using in my personal cooking, comprised of onions, green onions, garlic and tomatoes, cooked down to a sauce-like consistency. The chickpeas are soaked and boiled to perfection. The zucchinis are roasted al-dente, then everything is mixed together to create this deliciously fragrant filling.
