This empanada was created with vegan breakfast scrambles as inspiration. It is comprised of a combination of different veggies, black beans, and tofu, seasoned with spices such as turmeric, smoked paprika, and black salt. Each veggie that is a part of this empanada is of a different color, to provide a spectrum of nutrients, flavors, and textures. The black beans are soaked and cooked in house. Together with the veggies, they are meant to be the main players of this recipe. The tofu is a textural undertone, whose purpose is to bond the ingredients together.
